The Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot vineyards are hand harvested from February through to March and each individual vineyard block is kept separate throughout the fermentation process and monitored until the moment of blending.
The alcoholic fermentation takes place in stainless steel after which the wine is run off into 300 litre French Oak barrels.
In wintertime, after malolactic fermentation has allowed the personality of each vineyard to assert itself in barrel, the wines are carefully assessed to produce the most expressive, harmonious and complex wine. The blend is assembled and then allowed another year in barrel for the components to harmonise. The wine is finally bottled and left for a further 2 years before release. Rubicon is always released at four years of age and will immediately offer the distinctive character and quality of the Estate. However, further bottle maturation is advised for the intriguing complexity of this classic wine to unfold and reveal itself.

A powerful aromatic wine that is assertive yet delicate and refined, with ample cracked black and white pepper spice, hints of rich dark chocolate
against a substantial red berry fruit foundation tinged with subtle floral suggestions of violets and dried indigenous fynbos. A generously structured wine with ripe tannins that promises further integration and complexity on cellar maturation for up to 10 years.

A full, rich wine with a combination of red and black berry as well as spice flavours and a lingering finish of roasted hazelnuts and almonds. Complex aromas of ripe dark fruit and glazed cherries with a hint of smokiness and honey.
Considered a jewel of the Swartland, the Allesverloren Fine Old Vintage/Port is crafted from Tinta Barocca, Souzão, Pontac and a blend of Malvasia Rey, Tinta Röritz, Tinta Francisca and Touriga Nacional.
Lot 34 : Boschendal 1685 Sauvignon Blanc 2020 (750ml X 6)
This straw-coloured Boschendal 1685 Sauvignon Blanc Grande Cuvee has an aroma of herbs and tropical fruit, with hints of lime and green fig. These complex flavours carry through to the creamy, harmonious palate adding to the mineral zesty finish. Ready to drink now the Boschendal 1685 Sauvignon Blanc Grande Cuvée is the ideal partner for smoked fish, seafood and creamy poultry or veal dishes.
Lot 35 : Meerlust Merlot 2017 (750ml X 3)
Deep, youthful purple colour with a ruby rim. Intense dark brambly fruit on the nose, mulberry, liquorice and damson plum with hints of dark chocolate and spice, tempered by a stony minerality. The full bodied palate offers generous, ripe, pure Merlot fruit with refreshing acidity, structured yet silky tannins and pronounced length and minerality. There is a core of juiciness, opulence and richness typical of the variety, while the Cabernet Franc and Petit Verdot lend greater complexity to the wine.

A rare complex brandy with whiffs of vanilla, cloves and rich fruit flavours
in the vineyard : Oom Bennie (Brandy-master) distilled this 10 year old Brandy with great care and passion to produce a product of exceptional quality. The Brandy has been double distilled in an old Copper potstill which was originally used at Oude Molen in Stellenbosch.
in the cellar : Preparation of Wine: Potstill Brandy, made from Colombard, Sauvignon Blanc and Chenin Blanc wines.
Maturation: The Brandy was matured in selected 225l French oak barrels for 10 years at Blaauwklippen.
