A red wine blended from the best batches the winery can produce every year. Polished black fruit, evident tannins yet supple with a complex palate and a well-integrated modern finish. An iron fist in a velvet glove.   The nose is evocative, showing blackcurrants, red cherries, cedar wood, lead pencil and cigar box aromas. These develop in the glass and are joined by raspberry, black cherry, spice and a hint of gaminess. On the palate, the wine is powerful but elegant, with fine tannins that continue to soften in the glass. Lot 64 : Meerlust Rubicon 2016 (750ml X 3)

The Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot vineyards are hand harvested from February through to March and each individual vineyard block is kept separate throughout the fermentation process and monitored until the moment of blending.
The alcoholic fermentation takes place in stainless steel after which the wine is run off into 300 litre French Oak barrels.
In wintertime, after malolactic fermentation has allowed the personality of each vineyard to assert itself in barrel, the wines are carefully assessed to produce the most expressive, harmonious and complex wine. The blend is assembled and then allowed another year in barrel for the components to harmonise. The wine is finally bottled and left for a further 2 years before release. Rubicon is always released at four years of age and will immediately offer the distinctive character and quality of the Estate. However, further bottle maturation is advised for the intriguing complexity of this classic wine to unfold and reveal itself.

Tasting Notes: Stellenbosch Hills Cabernet Sauvignon has gorgeous ripe black cherry and mulberry flavours, subtly enhanced by a whiff of wood-smoke, a brush of vanilla and a sprinkling of pepper. Serve with: A superb partner to pasta or any red meat dish.   The Harvest: The grapes are hand harvested at the optimal time of aromatic concentration – 24° balling. It is of critical essence that the fruit is healthy, crisp with a good sugar/acid balance.   In the Cellar: Wine is matured for a period of 16 months in 30% new French oak and the remainder in 2nd and 3rd fill French oak barrels.
